Tumbong ng Niyog
In Laguna, tumbong ng niyog (the soft white growths found inside some coconuts) are collected and made into sweet preserves. In May and June, the fresh waters of Pakil bloom with purple water hyacinths and the boatmen row to collect the buds (called beno) in them.
Has also been referred to as “coconut apple” or “coconut pearl” by English speakers.
“JAM” NA TUMBONG NG NIYOG AT MANGGA
Tadtarin nang pinong-pino ang tumbong ng niyog at pakuluin ng mga 5 minuto. Sa isang tasang tumbong ng niyog ay maglagay ng 1/4 tasang dinurog na mangga, isang tasang asukal, at 3/4 tasang tubig. Lutuin hanggang lumapot. Samantalang nakulo pa ay ilagay na sa garapon na pinakuluang mabuti, at saka takpan nang mahigpit.
