Torta Cebuana
Torta Cebuana by Mildred Cruz.
In most of the Philippines, a torta refers to an egg omelette.
The area of Cebu in the Visayas region, however, has a torta Cebuana that’s closer to a cake.
Here’s a recipe:
INGREDIENTS
1 cup light corn syrup
2 cups all-purpose flour
2/3 cup oil
12 cup butter
2/3 cup condensed mlk
10 egg yolks
2 tbsp anise seeds
1/4 salt
1 tbsp vanilla
2 tbsp baking powder
Combine all the liquid ingredients with the anise seeds and salt. Mix very well, preferably with an electric mixer. Add the flour and mix into the mixture. Last, add the baking powder and mix for 90 seconds.
Place paper cups or banana leaves in the molds. Pour the mixture in the molds. Bake for about 30 minutes in a 325 F preheated oven.
Brush tops with butter and sprinkle with sugar before serving.
