Tamarind is a pod-like fruit known for its sweet and sour taste. Younger tamarind fruit has traditionally been used as a souring ingredient in the Philippine dish sinigang.
Ripened tamarind fruit is made into a favorite Filipino candy. The pulp is mixed with sugar and then either encrusted with white rock salt or dusted with finer white sugar. There could also be the application of both sugar and salt, one after the other.

More recently, tamarind has been turned into a juice flavor!
