Sinantulan
Sinantulan by Beth Ancaja.
In Philippine cuisine, Sinantulan / Sinantolan refers to having santol (cottonfruit) as the defining ingredient of a dish. In the same way, sinampalukan means the dish has sampalok (tamarind) as the distinguishing ingredient.
The featured dish above has santol, gata (coconut milk), pork, and bagoong alamang (fermented shrimp paste) as ingredients. It can also be called ginataang santol because the gata is a crucial ingredient as well.
