In the Philippines, salpicao is made primarily with tender cuts of meat, sautéed with garlic and seasoned with soy sauce and perhaps Worcestershire sauce.
The name “salpicao” is derived from the Spanish word salpicar, meaning “to sprinkle” or “to splash,” which reflects the dish’s preparation style where the meat is cooked quickly with garlic bits scattered throughout.
