Pinakro
A traditional Filipino snack from the Bicol region.
Pinakro is a banana treat known for its creamy texture and sweet flavor.
How To Make Pinakro
Ingredients
- 1 kg saba bananas, peeled
- 4 cups coconut milk
- 2 cups coconut cream
- 1/2 teaspoon salt
- 3/4 cup sugar
One kilogram is two and a half pounds.
Instructions
- Prepare the Bananas: Slice the peeled saba bananas lengthwise into four sections.
- Cook the Coconut Milk: In a pot, combine the coconut milk, 1/2 cup of sugar, and salt. Bring this mixture to a slow boil over medium heat and cook for about 10 minutes.
- Add Coconut Cream: Increase the heat to high, then add the coconut cream and the remaining sugar. Continue cooking for an additional 5 to 8 minutes, or until the sauce thickens.
- Serve: Remove from heat and serve warm or chilled as a snack or dessert.
This treat is also referred to as pinakrong saba or pinakrong saging or pinakrong batag.
“Batag” is the Bicolano term for saba bananas.
Tagalog speakers may describe this snack simply as ginataang saba or ginataang saging.
