Lumpiang Sariwa

This is what’s called Fresh Lumpia, as opposed to the more widely recognized deep-fried egg rolls filled with meat.
General Recipe from the 1960s for Making Lumpiang Sariwa:
Hugasang malinis ang iba’t ibang gulay, patatas, repolyo, garbansos, toge, papaya at iba pa. Banlian ng kumukulong tubig ang mga gulay. Prituhin nang hiwalay ang tokwa, patatas at garbansos. Magpirito sa mantika ng bawang at sibuyas at lutuin ang mga gulay. Ilagay ang mga sangkap, lagyan ng asin, toyo at atsuwete, at pakuluang mabuti.
Balutin na may sariwang letsugas sa balat ng lumpia. Lagyan ng maalat at dinikdik na bawang.
