Longganisa are Filipino sausages.
A few regions of the Philippines are known for their longganisa — Vigan in Ilocos Sur province, for example.
Featured here is the longganisa of Lucban, a town in the province of Quezon. It is a pork sausage prominently seasoned with garlic. Atswete is often added for a natural red color. Best served with rice for breakfast!
