Kinalas
A popular Bicolano noodle dish specifically assocaited with Naga City.
Skinned pig or cow’s head, boiled for hours until the meat falls off, creating a delicious broth. Noodles called mami, chicharon (crispy pork rind) and boiled egg are prepared in a bowl, then pour the steaming soup into it.
The flesh from the pork or cow’s head goes in as well. Top with fried garlic, chopped scallions, sili and for added flavor, the brain for the boiled animal’s head.
Aside from the broth, a brown-orange sauce much like the one used in pancit palabok is also added.
Kinalas got its name from the word “kalas,” which means to fall off, which is what happens in the lengthy process of cooking this dish.
