Inasal
The word “inasal” means grilled or barbecued.
Chicken Inasal is a famous barbecue dish from the Visayan islands, particularly the Negros and Iloilo areas.
The meat is marinated in a mixture of calamansi, pepper, vinegar and annato, and then grilled over hot coals, while still being basted with the marinade.
Serve it with rice and a dipping sauce of vinegar (sinamak or white vinegar) and soy sauce.
