Bistek na Bangus
Milkfish cooked in the style of Filipino beefsteak
Traditional bistek is made with thinly sliced beef that is marinated in soy sauce and citrus juice, then cooked with fried onions.
This modern variation uses milkfish belly instead of beef.
Prepare large pieces of boneless bangus belly, cut into halves. The marinade can include citrus juice, soy sauce, freshly ground black pepper, oil, flour, onions, water, and sugar.
Serve with steamed rice.
