Etymology: pares (meaning: pair)
This dish gets its name from the fact that beef is paired with a flavorful broth.
The seasoned braised beef is first cooked slowly in the broth, then removed. The flavored broth is then served alongside the braised beef.
To make it a complete Filipino meal, serve beef pares with a bowl of garlic rice.
