Kilawin
Kinilaw / Kilawin by Mary Rizale. Ingredients: fresh anchovies, grated ginger, grated red onions, hot pepper, salt, and vinegar.
To prepare raw fish or meat for eating without cooking is kilawin.
The dish Kinilaw is considered the Philippine counterpart of the Latin American ceviche. It is fresh fish or even pork “cooked” raw in vinegar.
